Tampa BBQ by Style: What Changes from One Pit to the Next

Tampa BBQ is not one flavor or one kind of restaurant. Compare six useful styles before you decide whether tonight calls for open-pit pork, Texas brisket, a Cuban, catfish or Korean tabletop grilling.

The useful question is not which place gets called the best. It is what kind of meal the pit is trying to make. Tampa gives you six real choices.

  1. Open-pit Tampa history

Big John's has cooked on an open pit in East Tampa since 1968. Jimbo's has held its West Kennedy corner since 1970. These are the old rooms for ribs, pork and the kind of broad pit menu that does not need a new story every season.

  2. Texas-minded brisket

The Brisket Shoppe puts Akaushi wagyu brisket and local oak at the center of the tray. Station House also makes Texas-style brisket, but its current Saturday-only preorder rhythm makes timing part of the meal.

  3. Tampa smoke with its own accent

Al's brings Tennessee-style ribs into a BBQ and soul-food room in Ybor. Southern Luv works with pecan smoke and a Cuban that has placed at Tampa's International Cuban Sandwich Festival. Wicked Oak turns smoked meat into Tampa sandwiches without losing the standard plates.

  4. Catfish and BBQ on equal footing

Hank's is the answer when half the table wants the smoker and the other half wants the fryer. It is not a BBQ place carrying one fish plate as an afterthought.

  5. Beer, pop-ups and a moving pit

Coppertail is a Ybor brewery whose kitchen smokes meat and makes sausage. The Liberty Smokehouse moves the other direction: the veteran-owned mobile pit follows brewery, venue and event schedules around Tampa Bay.

  6. Korean BBQ at the table

Sa Ri One is not a Southern smokehouse. The Cypress Street room gives you Korean dishes and tabletop grilling, which makes it the biggest change in both flavor and experience on this list.
